Homemade Candied Orange Peel
You don't need to go to the store to buy candied orange peel - just make it yourself!

  • 3 navel oranges, peeled with rind
  • ⅔ cup water
  • ¼ cup freshly squeezed orange juice
  • ¾ cup sugar
  1. Rinse oranges well
  2. Cut ends off oranges, then peel the orange using a peeler making sure you get the rind and the pith. Squeeze ¼ cup of orange juice out of one of the oranges and wrap the others with wrap for later use,
  3. Cut the peel into thin strips julienne-style about ¼" wide.
  4. Place orange peels In a large sauce pan, and add water just to cover the peels (about 2 cups)
  5. Bring to a boil, then drain and repeat, 2 more times. This process helps rid the peel of bitterness.
  6. In a medium pot add water and orange juice and whisk in sugar. Whisking frequently, to dissolve sugar, bring the mixture to a simmer, and let it cook for about 8 minutes.
  7. Add orange peel and resist the urge to stir the mixture - just gently add the oranges, making sure they are covered in the liquid, by gently swirling pot and let science take over. (If you stir the mixture at this point, it'll cause crystallization).
  8. Let the orange peels cook, over 'simmer' heat, and adjust the heat to maintain a simmer, for about an hour, or until translucent.
  9. Remove from stove and Drain the peels and place them on a drying rack to dry for 3-4 hours. I ended up with about a teaspoon of syrup. Store in an airtight container for future use.
